Which ingredient couldn’t you live without?
Salt — used in a controlled way.

What was your favourite family meal?
Asparagus with hollandaise sauce, gratin dauphinois and roast chicken eaten in our garden.

What’s the best meal you’ve ever had?
Dinner with friends for my 40th birthday at Nadia Santini’s Ristorante dal Pescatore in Mantova, Italy.

Which chefs do you admire?
My father (Jacques Pic), Paul Bocuse, Michel Bras and Nadia Santini.

Which five guests would you most like to dine with?
Sofia Coppola, Roger Moore, Inès de la Fressange, Charles Aznavour and Emma Thompson.

What’s your next project?
The setting up of the Anne-Sophie Pic’s Foundation, to give children the pleasure of taste.

Where would you like to go to sample the local cuisine?
China — it’s a cuisine I am not so familiar with.
