Demarquette
Marc Demarquette trained in France before launching his west London chocolaterie (285 Fulham Road, London SW10 9PZ; +44 (0)20 7351 5467, demarquette.com) in 2006. Lately he’s been working with the Tregothnan estate in Cornwall to create chocolates using some of the produce grown there, including tea and kea plums. Next up are chocolates made with manuka honey and Tasmanian pepper.
William Curley
Named Britain’s best chocolatier by the Academy of Chocolate in 2007 and 2008, William Curley (10 Paved Court, Richmond upon Thames TW9 1LZ; +44 (0)20 8332 3002, williamcurley.co.uk) creates chocolates inspired by French and Japanese cuisine. Think jasmine tea, yuzu, rosemary and olive oil.
Paul Wayne Gregory
No flavour is too extreme for chocolatier Paul Wayne Gregory (online only; +44 (0)20 8664 8966, paulwaynegregory.com). Tobacco, red onion and balsamic vinegar are among the ex-pastry chef’s recent creations. For more mainstream tastes, his Pure Indulgence box includes coffee, mint and passion fruit handcrafted chocolates.
Paul A Young
Paul A Young (shops in Islington and Bank, London; +44 (0)20 7424 5750, paulayoung.co.uk) honed his skills as a pastry chef under Marco Pierre White before opening his chocolaterie in 2006. Check out his sea-salted caramel, raspberry ganache and dark chocolate truffle.
