Which ingredient could you not live without?
Tomatoes. My cooking relies on healthy, light ingredients, with a taste of the Mediterranean.

What was your favourite family meal growing up?
Chocolate cake. We would make it together as a family. It still reminds me of my house and my childhood.

Which chefs do you admire?
Heinz Winkler. He has been a very important part of my career. I was his sous chef at his three Michelin-starred Residenz in Aschau, Germany, and I have a huge amount of respect and admiration for him.

Which five guests would you most like to dine with?
Machiavelli, Al Pacino, Freddie Mercury, Matisse, Renzo Piano.

What’s your favourite cuisine?
Italian.

What can you cook in ten minutes?
Spaghetti with clams.

Where’s your favourite food destination?
Japan. I would like to visit Asia more as I have only been twice.
