What can you cook in ten minutes?
Tagliatelle of wild mushrooms and asparagus, poached free-range egg and Parmesan.

Best meal you’ve ever had?
It was at London’s Capital hotel.

Which chefs do you admire?
Keith Floyd as he started my career, Pierre Koffman (of La Tante Claire) for his continued success, Thomas Keller of the French Laundry and Ferran Adrià of el Bulli.

What is the secret of a successful restaurant?
Be consistent yet always try to evolve dishes and service. Listening to customers’ feedback is also essential.

Which five guests would you most like to dine with?
Motorbike racers Valentino Rossi and Carl Fogarty, surfer Kelly Slater, Sophie Ellis-Bextor and Keira Knightley.

What’s your favourite foodie destination?
The UK. We are at the forefront of modern cookery.

Where would you like to go to sample the local cuisine?
China – I’d love to try the authentic street food in the markets and villages.
