What is your guilty pleasure?
It has to be a Kit Kat.

What was your favourite family meal when you were growing up?
Pan-fried baby rabbit for a light lunch. It was simple and utterly delicious.

What can you cook in ten minutes?
An awful lot. I'd go with a lovely omelette, which you can cook in only five minutes, so half the time.  

What's the best meal you've ever had?
It was at Gambero Rosso, a two-Michelin star restaurant in San Vincenzo, Tuscany. Heaven on a plate every time.

Which chef do you admire the most?
Albert Roux is amazing. His dogged determination to just keep going is an inspiration.

What is the secret of running a successful restaurant?
Lots of time, plus passion and energy.

What's your favourite foodie destination?
Italy — I love the place. Autumn in northern Italy is one of the loveliest places on earth.
