What’s your guilty pleasure?
Pot Noodles. I love the texture and artificial flavour. Sorry.

What was your favourite family meal growing up?
Breakfast with fresh tomatoes, cucumbers and spring onion, local quark cheese, my mother’s apricot jam and hot toast.

What can you cook in ten minutes?
Seafood linguine with tomato and coriander.

What’s the best meal you’ve ever had?
It was at Quay in Sydney Harbour. Peter Gilmore’s desserts are the most magnificent in the world.

Which chefs do you admire?
None! I have endless respect for traditional home cooks who hold and nourish treasures of ancient knowledge.

What is the secret of a successful restaurant?
Consistency and confidence, both in the food and service.

Where’s your favourite foodie destination?
Tokyo, and I would love to go to Beirut to sample some local cooking.
