Tell us what you are up to?

I have recently been appointed executive head chef at the Bath Priory, which has one Michelin star so expectation is high.

Which ingredient couldn’t you live without?

Salt. Life would be very dull without any salt in cooking. It really does liven up any dish.

What was your favourite family meal when you were growing up?

Sunday roast. It was great to get together as a family and to listen to Dad’s stories.

What’s the best meal you’ve ever had?

It was the tasting menu at Le Manoir aux Quat’Saisons, when I was 19. When I went on to work there, I was in awe of everything.

Which five guests would you most like to dine with?

Barack Obama, Vladimir Putin, Nelson Mandela, Martin Luther King and Gordon Brown.

What’s your favourite food?

It would be between Asian and modern European.

What’s your next project?

ABode Hotel Chester.
